Paleo Raspberry Crepes


If you ever need a quick sweet fix while on the Paleo diet and you don't have a lot of time.  Try whipping this recipe up.  You will absolutely love it and feel extremely satisfied!!  I just timed myself and it took me 11 minutes 15 seconds from start to first bite.  If you can find chestnut flour it really is worth it.  It is a super fine flour so it works great without having to sift it and it gives it a very smooth taste.  I think I fell in love with roasted chestnuts at the German Christmas Markets this winter.  I have never had them before and wow, yummy.

Paleo Raspberry Crepes
Ingredients:
  • 1 tablespoon palm oil or coconut oil-melted
  • 2 eggs
  • 2 tablespoons chestnut flour or coconut flour
  • 2 tablespoons water
  • 3 tablespoons almond milk
  • Raspberries
  • Blueberries
Instructions:
  1. Heat oil in pan med-high heat.
  2. Wisk the eggs the add the flour, water, almond milk and some of the melted oil.
  3. Continue to wisk for a couple of minutes.
  4. Pour 1/3 of mix in pan and swirl around so that the batter reaches all sides of med sized pan.
  5. Cook until edges start to bubble then carefully flip over.
  6. Cook a minute or two longer and slide crepe onto plate.
  7. Put a handful of raspberries and blueberries on crepe and roll up.
  8. To add a little more sweet you can use a couple of teaspoons of natural fruit sweetened jam to top it off.

  1. Oh my.....just made these for breakfast for the whole family and it's a keeper! It was sooooo easy and sooooo good! I used the chestnut flour (for the 1st time) and since my fruit was frozen....I simply warmed them in a pot and filled the crepes with the warmed fruit - yum! Thanks Jen for another yummy recipe! :)
