Dad's Pork Chops with Asparagus

Another Successful Paleo Day!!!!

I can't tell you enough how wonderful it is to have energy again!!  Chris and I are really enjoying our new routine that will soon become a way of life for us both.  To go throughout your day without stomach pains and feeling very satisfied after a meal is enough to keep on doing it.  I am so blessed to have such a supportive husband who is willing to try all creations that I make!

Today I was up before everyone for the second day in a row full of energy and ready to start my day... A HUGE accomplishment for me.  It is so much more pleasant to be up before your toddlers awake demanding the world of you.  Breakfast was made, lunches were packed and mom was reading emails and doing last minute preps for the day when the boys emerged from their beds.  Big smiles all morning long made for an easy transition to Kindergarten.

Today's menu was again compliments of Everyday Paleo, Dad's Pork Chops.  I really hope she doesn't mind me using her as my meal planning guide.  We are getting ready to move back to the States very soon so with all the preparation for our big move there is little time to be super creative in the kitchen.  So again Big Thanks to Everyday Paleo!  Her site rocks.  If you haven't checked it out it is a must.  

My other big Thanks is to Elana's Pantry for a delicious dessert after chowing on the pork chops.  My husband made some calming tea and we devoured our Paleo version of Elana's Chocolate Cranberry Power Bar.  I will post my changes to her recipe tomorrow.  But here is a sneak peak at pure yummies!
