Two thumbs up from my 4 and 5 year old!! This recipe is a keeper and no one will ever know it is not a regular brownie. I've been threatening to write up this recipe for months now and finally I find the time to get it done. If you are about to start the next Paleo Challenge take out the agave and use a cup of apple butter instead then make up a batch of these gems and freeze them. Pull a couple out at a time for an awesome Paleo treat at the end of a successful Paleo week. You deserve it!

If you haven't picked up the Organic Grass-Fed Skirt Steaks from the Fruit Bowl then it is a must!! This slab of beef is to die for and so worth every penny! Everyone that I have told about it and tries it and then raves about it. If you don't see it in the glass meat counter of the Fruit Bowl just ask Dave if they have any in the back. The more we ask for the Grass Fed beefs the more he will be able to get for us and the higher the demand the better the price will be. One of these days I'll have my own garden and be able to grow some basil but this girl has a serious brown thumb so it might be awhile. In the meantime we are lucky enough to know someone who does have a green thumb and are more than generous to share their growth with us. Big thanks to our own CrossFitters Kristen and Joe for the Basil that my husband perfected his speciality Pesto with. It rocks! We are now coming to the end of our second week of the 30 Day Paleo Challenge and if you are all like I was in my first challenge you are probably getting sick of always going for the nut snacks. It is so easy to overdue it on the nuts (which doesn't help with weight loss) with all the nut bars, nut muffins, nut flours ect... so this week I tempt you with an awesome alternative to the nuts with this fabulous recipe from PaleoTable.com, Sweet Potato Recover Bars!
Pick up some organic sweet potatoes at the Fruit Bowl, wash them, cut them in half and roast them in your oven at 450 for 20-25 minutes and you will put together the most awesome no nut bar you have ever had! Enjoy!!

I hadn't done this recipe in over a year and now that my new crockpot is back in action it was a must tonight. It is Fall time even though you wouldn't know it in St Thomas but having air conditioning in the kitchen is a huge help in cooking comfort foods like this. From my favorite cookbook, Primal Blueprint Quick & Easy Meals by Mark Sisson and Jennifer Meier. I was so hungry at the end of Day 1 that we ate too fast and missed our picture taking opportunity. This picture is from one of my other favorite sites, PaleoTable.com and gives you the idea anyway.
It was originally one for the grill but Chris and I are still trying to get used to our new charcoal grill. What do you mean I need to buy more charcoal... haha. So plan B, the veggies in the oven and the pork in the grill pan. This was one our favorite summer dinners while we were in Newport however it calls for 3 tablespoons of butter and being on the Paleo Challenge that "primal" ingredient had to go. I substituted 2 tablespoons of coconut oil and one of olive oil and it still rocked! I think I would do it again with just coconut oil and add a little more oil for the veggies. This is definitely a keeper!

If you have a kid that just won't eat his greens you must give this a try because mine just sucked this down and asked for more!! Of course I have to call it the "Incredible Hulk Smoothie"! Whatever works, right?
This is also one of my favorite drinks to have in the morning before my workout. I drink this along side a couple of eggs and apple slices and I'm good to go! Enjoy the simplicity and delicious taste of greens that don't taste like greens.
We don't do pork very often but when we do it is nice to have a recipe that rocks and this one does just that. Nothing like a easy meal that you throw together in the morning and dinner is done! All last year I missed out on my crockpot meals because of where we lived. I know now that it wasn't my crockpot that didn't work but the "dirty" power that was coming to our house that wouldn't allow my pot to get as hot as it needed to cook the meat. After ruining a couple of meals I decided to put the crockpot away. Now in our new house I gave it a shot the other day and it worked like a charm!!! So happy to be back in business.

Made my first recipe out of my new book, Everyday Paleo Family Cookbook by Sarah Fragoso, for dinner tonight and it was great!! Savory Salmon and Cool Peach Salsa... if you have the book it is pg 140. The recipe calls for peaches or mangos. I used peaches since there were no mangos today and then I added one avocado to the salsa and man that was a good call. The only draw back to this recipe is the amount of chopping but after I took one bite it was well worth it.
Serve it over a bed of fresh greens and you have the perfect Paleo dinner!

For those of you that have been following the Gluten Free Connoisseur you have my deepest apologizes for the silence and so few posts in this past year. In a nutshell it has been a whirlwind... moved from Germany to Newport for the summer, moved to St Thomas, USVI, started training CrossFit from our home, got pregnant and as my belly grew so did CrossFit St Thomas, opened our new doors in April, baby arrived in June and here we are today back on Island running Reebok CrossFit St Thomas, the only CF Box in the Virgin Islands! My sister was a rock star in the kitchen when she came to help me just before I had baby #3. Keep in mind that my sister has never liked cooking or baking for that matter but when she was diagnosed just this past year with Celiac's disease she FINALLY realized that it was time to make a change on what she was eating and that meant learning to find a passion for kitchen time! I'm so proud of my "big" sister for changing her habits and embracing the life of Gluten Free, Grain Free!!

We are back in Newport and Spring is amazing! Wow, such a nice break and change from St Thomas. It is May Fair time at all the schools and my kids school is hosting their fair tomorrow so when they asked for baked good items I was one of the first to sign up. No doubt in my mind that these will be the only gluten free minimal grain muffin on the table. These muffins are so awesome and moist that they don't even need the frosting but for an affair as such with all the kids a light cream cheese and honey frosting can't hurt and now we have "cupcakes"! My two little picky eaters LOVE these muffins as will yours. Big Thanks to Crystal for sending this recipe my way. Enjoy!

I finally got around to using the sweet potatoes that have been sitting on my counter and wow I'm glad I did. I loved the turnip soufflé dish so much that I figured I would try a version of that with the sweet potatoes and yum a dum dum this is the best sweet potato dish I have ever tasted! There is something about adding those eggs and baking it that gives it that light and fluffy texture. I took out the milk that was added to the turnip dish and used a small amount of coconut flour instead of regular flour. I tried everything to convince my kids to try a bite but as usual they refused. They would both rather eat Gerber Organic Sweet Potato baby food. At least it is healthier than eating a big bowl of pasta like so many other kids. All I can say is "More For Me!"

Did you ever think you could enjoy Pad Thai again when you made that decision to go Paleo? It didn't occur to me until one night I made a dish out of Primal Blueprint Quick & Easy, Skirt Steak and Turnip Risotto, which was awesome by the way, that gave my husband this great idea! As we were enjoying this delicious dinner he had a thought... "hey why don't you try using turnips to make a pad thai?" Great idea! And the wheels began to turn as I adapted a recipe from allrecipes.com into this scrumptious dish! But I do have to admit that we kept the peanuts in, which is not Paleo, so next time we will try a different nut or no nuts at all. Giving up the small amount of peanuts is hard to do if you really want that original Pad Thai taste.

Who would have thought that Turnips could be so tasty? There are so many wonderful things that can be done with Turnips that will leave your tastebuds satisfied. My mother-in-law always seems to find such great recipes and always takes the time to make sure that everything she makes is gluten free for me. I can't thank her enough for all her great cooking and inspiration!
This recipe was given to her by one of the "little old ladies" in her dance class and it is a keeper! I only made a few modifications but think I might try another version that is strict Paleo, not sure that it actually needs the flour, but if it does I'll give coconut flour a shot. Enjoy!

Looking for some good "Safe" restaurants to eat at in St Thomas? See my USVI link for a listing of my favorite places to eat and shop. I have yet to find a place that actually has a gluten free menu but all in good time. At least some of the restaurant owners are already aware of the issue. But don't forget to always inform your wait staff before ordering to ensure no cross contamination occurs.
