I hadn't done this recipe in over a year and now that my new crockpot is back in action it was a must tonight. It is Fall time even though you wouldn't know it in St Thomas but having air conditioning in the kitchen is a huge help in cooking comfort foods like this. Spice Rubbed Pork Chops and Baked Zucchini
From my favorite cookbook, Primal Blueprint Quick & Easy Meals by Mark Sisson and Jennifer Meier. I was so hungry at the end of Day 1 that we ate too fast and missed our picture taking opportunity. This picture is from one of my other favorite sites, PaleoTable.com and gives you the idea anyway.
It was originally one for the grill but Chris and I are still trying to get used to our new charcoal grill. What do you mean I need to buy more charcoal... haha. So plan B, the veggies in the oven and the pork in the grill pan. This was one our favorite summer dinners while we were in Newport however it calls for 3 tablespoons of butter and being on the Paleo Challenge that "primal" ingredient had to go. I substituted 2 tablespoons of coconut oil and one of olive oil and it still rocked! I think I would do it again with just coconut oil and add a little more oil for the veggies. This is definitely a keeper!

Spinach/Kale Smoothie
If you have a kid that just won't eat his greens you must give this a try because mine just sucked this down and asked for more!! Of course I have to call it the "Incredible Hulk Smoothie"! Whatever works, right?
This is also one of my favorite drinks to have in the morning before my workout. I drink this along side a couple of eggs and apple slices and I'm good to go! Enjoy the simplicity and delicious taste of greens that don't taste like greens.
Paleo Slow-Cooked Carnitas
We don't do pork very often but when we do it is nice to have a recipe that rocks and this one does just that. Nothing like a easy meal that you throw together in the morning and dinner is done! All last year I missed out on my crockpot meals because of where we lived. I know now that it wasn't my crockpot that didn't work but the "dirty" power that was coming to our house that wouldn't allow my pot to get as hot as it needed to cook the meat. After ruining a couple of meals I decided to put the crockpot away. Now in our new house I gave it a shot the other day and it worked like a charm!!! So happy to be back in business.

Salmon Salsa that Rocks
Made my first recipe out of my new book, Everyday Paleo Family Cookbook by Sarah Fragoso, for dinner tonight and it was great!! Savory Salmon and Cool Peach Salsa... if you have the book it is pg 140. The recipe calls for peaches or mangos. I used peaches since there were no mangos today and then I added one avocado to the salsa and man that was a good call. The only draw back to this recipe is the amount of chopping but after I took one bite it was well worth it.
Serve it over a bed of fresh greens and you have the perfect Paleo dinner!

Paleo Lamb Stuffed Zucchini
For those of you that have been following the Gluten Free Connoisseur you have my deepest apologizes for the silence and so few posts in this past year. In a nutshell it has been a whirlwind... moved from Germany to Newport for the summer, moved to St Thomas, USVI, started training CrossFit from our home, got pregnant and as my belly grew so did CrossFit St Thomas, opened our new doors in April, baby arrived in June and here we are today back on Island running Reebok CrossFit St Thomas, the only CF Box in the Virgin Islands!
