Paleo Brownies


Two thumbs up from my 4 and 5 year old!!  This recipe is a keeper and no one will ever know it is not a regular brownie.  I've been threatening to write up this recipe for months now and finally I find the time to get it done.  If you are about to start the next Paleo Challenge take out the agave and use a cup of apple butter instead then make up a batch of these gems and freeze them.  Pull a couple out at a time for an awesome Paleo treat at the end of a successful Paleo week.  You deserve it!
Ingredients:
  • 16 oz walnuts or (1 cup walnuts & 1/2 cup cashew butter)
  • 1 egg
  • 1/2 cup apple butter, Medford Farms
  • 1/2 cup agave syrup
  • 1/2 cup baking cocoa
  • 1 tablespoon organic vanilla extract
  • 1/2 teaspoon aluminum free baking soda
  • 2 oz unsweetened dark chocolate chopped (Baker's unsweetened chocolate)
  • 1-2 tablespoons coconut oil (for greasing pan)
Instructions:
  1. Preheat oven to 325
  2. Grease an 8 x 8 baking dish with coconut oil
  3. Pulse walnuts in food processor until smooth like walnut flour.
  4. In a large bowl beat an egg
  5. Add in nut butter and vanilla and stir to combine.
  6. Add in cocoa powder, salt and baking soda
  7. Stir in chopped chocolate
  8. Pour batter into greased baking dish. (can also make mini muffins for the kids)
  9. Bake for 30-35 minutes
  10. Cool for 15 minutes, cut and eat
