We came across this recipe the other day while searching for something to do with the ground chicken in my fridge. Of course Elana's Pantry never lets me down... Not only was this absolutely amazing with the ground chicken but then a few days later I made the same thing with grassfed ground beef. So simply delicious! I threw together my own simple tomato sauce and served it over sautéed shredded zucchini and yellow squash as our "pasta". Pure Awesomeness!

Brent Burgers with Roasted Butternut Squash
Some of my best memories as a child are about my big brother Brent. He was 8 years older than me and soooooo super cool in my eyes. He always took care of me when my older sister was beating up on me which meant he would beat up on her. :) He could consume an entire box of Lucky Charms in one sitting while we begged for more. He played just about every instrument but his favorite was the guitar and on many nights I would fall asleep to the sounds of him strumming below my bedroom. He was a CAPT in the Marine Corps and flew UH-1 helicopters... his passion in life! And occasionally he would make the most awesome burger... his secret ingredient... sunflower seeds. Super simple and super delicious!
Tonight's dinner is for you Brent! I will always love you and miss you!!

Paleo Chocolate Chip Cookies
I have taken this recipe from Elana's Pantry and morphed it a million times. I have done versions of strict paleo to paleo to primal and all of them have been awesome. What I am sharing with you today is my strict paleo challenge approved option since we still have over a week left on our challenge and a lot of you are aching for some treats. The picture above is actually one that I did with dark chocolate chips for my kids and they loved them! A huge hit at their friends birthday party.

GrassFed Rib Eye Roast
If you haven't picked up your side of Rib Eye Roast from the Fruit bowl you'll want to for this recipe. After living in St Thomas for over a year and a half now this is the first time I have found a good quality roast and the price was right!! Needless to say I was sooooo excited for this. If you buy the whole side of either the Rib Eye or the NY Strip Dave will price it about $13.59 per lb. Mine was just over 9 lbs and I cut it in half to use one side for the roast and then sliced up 8 rib eye steaks. Oh yea baby we got some awesome grassfed beef on hand. If you are worried that you won't be able to eat all this meat before it expires, don't be. The meat is vacuumed sealed and will keep fresh for 21 days in the fridge. Once you slice it up you can freeze the extra meat for a later day.
Now, back to the kitchen... This recipe is by far one of the most simple meals I have made and full of amazing flavor by Edible Harmony.

Paleo Raspberry Streusel Bars
Last night was the International Dinner at Antilles and was our first year going... Last year I just felt too pregnant to attend and I didn't have a working oven in my house... long horrible story... to be able to make anything that I knew I would be able to eat. It is always difficult going to functions like this when you eat a gluten free/grain free diet and are on a Paleo diet. I found it pretty easy to find meat but the lack of veggies was astonishing. I enjoyed the German table of pork, cabbage and homemade applesauce to die for, and it brought back so many great memories of our days in Germany. Most booths were loaded with Meat and Complex Carbs... I think next year I will do a complete Paleo table and go heavy on the veggies. I hope some of you got to enjoy the Paleo treats that I made for Mashelle's desert table, they went fast. If not here is one of the recipes that was a huge it. I'll be posting the Cheese cake, Pumpkin Pie and Chocolate Chip ones as well. Enjoy!
