I have taken this recipe from Elana's Pantry and morphed it a million times. I have done versions of strict paleo to paleo to primal and all of them have been awesome. What I am sharing with you today is my strict paleo challenge approved option since we still have over a week left on our challenge and a lot of you are aching for some treats. The picture above is actually one that I did with dark chocolate chips for my kids and they loved them! A huge hit at their friends birthday party.
Ingredients:
- 2 cups almond flour
- 1/4 teaspoon sea salt
- 1/2 teaspoon baking soda
- 1/4 cup coconut oil
- 3 tablespoons Pear or Apple Butter (Use 2 tablespoons of local honey if not on challenge)
- 1 tablespoon vanilla extract
- 2 oz square unsweet bakers chocolate chopped
Instructions:
- Place almond flour, salt and baking soda in food processor
- Pulse in oil, pear butter and vanilla until dough forms
- Lightly pulse in chocolate chunks
- Scoop dough one tablespoon at a time and press balls down gently
- Bake at 350 degrees F for 8-10 minutes
- Cool for 15 minutes (do not handle prior or cookies will break)
