Paleo Chocolate Chip Cookies


I have taken this recipe from Elana's Pantry and morphed it a million times.  I have done versions of strict paleo to paleo to primal and all of them have been awesome.  What I am sharing with you today is my strict paleo challenge approved option since we still have over a week left on our challenge and a lot of you are aching for some treats.  The picture above is actually one that I did with dark chocolate chips for my kids and they loved them!  A huge hit at their friends birthday party.

Ingredients:
  • 2 cups almond flour
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon baking soda
  • 1/4 cup coconut oil
  • 3 tablespoons Pear or Apple Butter (Use 2 tablespoons of local honey if not on challenge)
  • 1 tablespoon vanilla extract
  • 2 oz square unsweet bakers chocolate chopped 
Instructions:
  1. Place almond flour, salt and baking soda in food processor
  2. Pulse in oil, pear butter and vanilla until dough forms
  3. Lightly pulse in chocolate chunks
  4. Scoop dough one tablespoon at a time and press balls down gently
  5. Bake at 350 degrees F for 8-10 minutes
  6. Cool for 15 minutes (do not handle prior or cookies will break)
Makes 20-24.
