Paleo Banana Almond Muffin

Well...you know you've neglected your blog and followers when you get a message on your iphone from facebook that says..."What's new with the Gluten Free Connoisseur? Write a post now."  Has it really been over 3 months since I wrote last.  Sooo you want to know what's new FB?  My baby turned One in June and life just got busier as you mom's know.  I will try my best to get back into the blogging groove because I love to share awesome recipes, and this is a keeper!

Continuing to improve on my Paleo (grain free) muffins I believe I hit another jack pot because all three of my boys were eating these ones up!  I have to admit I had to sprinkle a few mini dark chocolate chips on some so that my four and six year old would eat them and they did.

Ingredients:
  • 1 cup almond flour, sifted
  • 1/4 cup coconut flour, sifted
  • 3 ripe bananas
  • 3 eggs
  • 1/4 cup coconut oil
  • 1/3 cup Pear or Apple butter
  • 1/4 teaspoon sea salt
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1/2 teaspoon almond
  • 1/2 cup walnuts chopped to a course meal in cuisnart
Instructions:
  1. Place eggs, oil, banana, vanilla, almond extract and pear/apple butter in blender until combined
  2. In a separate bowl mix flours, salt, and baking soda 
  3. Add dry ingredients to wet and mix until just combined
  4. Mix in walnuts
  5. Scoop 1/4 cup batter into lined 12 cup muffin pan
  6. Sprinkle with mini dark chocolate chips (optional)
  7. Bake at 350 for 18-20 minutes
  8. Cool and serve.
