Continuing to improve on my Paleo (grain free) muffins I believe I hit another jack pot because all three of my boys were eating these ones up! I have to admit I had to sprinkle a few mini dark chocolate chips on some so that my four and six year old would eat them and they did.
Ingredients:
- 1 cup almond flour, sifted
- 1/4 cup coconut flour, sifted
- 3 ripe bananas
- 3 eggs
- 1/4 cup coconut oil
- 1/3 cup Pear or Apple butter
- 1/4 teaspoon sea salt
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1/2 teaspoon almond
- 1/2 cup walnuts chopped to a course meal in cuisnart
- Place eggs, oil, banana, vanilla, almond extract and pear/apple butter in blender until combined
- In a separate bowl mix flours, salt, and baking soda
- Add dry ingredients to wet and mix until just combined
- Mix in walnuts
- Scoop 1/4 cup batter into lined 12 cup muffin pan
- Sprinkle with mini dark chocolate chips (optional)
- Bake at 350 for 18-20 minutes
- Cool and serve.
