Chicken Surprise

In search of trying to get my kids to eat better and healthier I came across this book, The Secrets of a Paleo Diet for Kids.  Looking for anything that my picky eaters might go for brought me to this one.  My sister and made it for the first time over the summer and we were more surprised than the kids...haha!  Both her kids were super and actually ate their little packets of yummieness and one even said she really liked it.  YEAH that's a small victory that I will take.  My kids on the other hand, one of three tried it but only ate a couple of bites with no comment...so typical....boohoo.  So it wasn't a success for my kids but probably a good one for most kids out there and definitely one for the whole family, my husband loves it.  The original recipe calls for chicken breast which I have done but we prefer the thighs, carrots which are great too if your kids aren't into sweet potatoes and if you don't have one of those dried herbs try throwing in one of your favorites.  It's pretty forgiving and adaptable. And...

Bowl of Health--Turmeric Ginger Soup


Anti inflammation magic recovery soup...drink it cold, hot, for breakfast lunch or dinner...

Fresh Harvest seasonal veggies inspired soup...  I can't get enough of the Georgia local Farmers picks where I don't have to decide what to buy.  The produce arrives and I get to figure out what to do with it. So much fun and exciting.  When the tumeric root showed up I wasn't quite sure what to do with it but then it dawned on me that this would be the most perfect ingredient to kick off the perfect soup that will aid in our constant fight to balance our bodies and reduce inflammation.  If you haven't heard or looked into this and are struggling with disease, allergies or just plain jane sickies, your body has inflammation that needs to be addressed.  Your body is only inflamed because it is doing all it knows to combat a poor nutrition diet.  Get your inflammation under control and see the power your body has now to fight off infection, disease and keep your allergies at bay.  Take control now so your body can do what it is designed to do.  Eliminate the culprit...inflammation, and start living again!

Okra Anyone???

Who would have thought that this California turned Georgia girl would ever like Okra...why in the world would anyone like that weird slimy looking veg from the south??? Thats what I always thought and from talking with some friends I'm not the only one.  But I'm serious when I tell you I have found a new love and can't stop eating the "slimy stuff".  Haha!!  Although don't worry when you cook it like this there is no slime

Once again Fresh Harvest has introduced me to a new seasonal veggie in my weekly basket and given me the little nug in the right direction on the proper fixins of this interesting looking veggie.  If any of you bake your broccoli in the oven this is basically the same exact process of drizzling with olive oil, sprinkling with salt and pepper and baking until done.  Oh so good!

Watermelon Cucumber Salad

If I haven't mentioned the amazing Farmers Market delivered to your doorstep service...shame on me.    Fresh Harvest is by far the best company I have come across in Atlanta to not only provide the most amazing hand picked LOCAL seasonal fruits and veggies but to deliver it directly to your doorstep in their reusable "baskets".  They pack it all perfectly in plastic storage bins on ice blocks so that if it arrives before you get home no worries.  You can also add items easily by customizing your basket with things like local Georgia cows milk (yep the kind with the cream on top...nothing better), lemons, bananas, pickled okra...and the list goes on.  I love the element of surprise to see what the picks of the week are and how it is teaching me to know what grows naturally at different times of the year.

Meatza Pizza Grain-Free


Looking for a great summer meal for your kids?  Look no further because this one is a keeper and most kids love it.  I say most because I think everyone has at least one super picky eater in the family and all I have to say to that is "more for me!!"  I know that if he would take one bite he too would love it, so I haven't given up hope.  I made this for my 4 year olds birthday party and it was a hit with the parents as well as the kids!  I absolutely love making food for the Harkey kids because they appreciate good tasting food and when Finn's friend Cooper said "MMMMmmm this is good" my heart melted!  Thanks buddy!  I'm looking forward to sharing this one with my sisters and their kids.  The original recipe came from "The Secrets of Paleo Diet for Kids" by Ravi Kishore.  Keep in mind this has cheese in it so it is not 100% paleo but it is 100% grain free.  Hope you all enjoy this one as much as we do.

Tara Chicken in Sun-Dried Tomato Cream Sauce


If you are looking for another amazing and quick fix chicken dish this one is your next creation!  I'm always on the hunt for good and fast meals that are crowd pleasers and when our friend Tara sent me this recipe it wowed everyone!  I made this for New Years Eve for the family with a side of kale chips from our local Fresh Harvest and spent more time with my family than I did in the kitchen... you would have thought I spent hours preparing...Gotta Love that!  Here's to an amazing 2016 of great food and low stress!  Happy New Year!
