Tara Chicken in Sun-Dried Tomato Cream Sauce


If you are looking for another amazing and quick fix chicken dish this one is your next creation!  I'm always on the hunt for good and fast meals that are crowd pleasers and when our friend Tara sent me this recipe it wowed everyone!  I made this for New Years Eve for the family with a side of kale chips from our local Fresh Harvest and spent more time with my family than I did in the kitchen... you would have thought I spent hours preparing...Gotta Love that!  Here's to an amazing 2016 of great food and low stress!  Happy New Year!
Tara Chicken with Sun-Dried Tomato Cream Sauce

Ingredients:
  • 1 1/2 - 2 lbs of chicken breast (Butterflied)
  • Sea Salt and pepper to taste
  • 3 tablespoons unsalted butter, divided
  • 3 garlic cloves, minced
  • 1/4 teaspoon red pepper flakes
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/3 cup julienned sun dried tomatoes in olive oil
  • 1/4 cup freshly grated Parmesan
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried oregano
Instructions:
  1. Season chicken with salt and pepper
  2. Melt 2 tablespoons butter in large skillet over med high heat
  3. Add chicken and sear both sides until golden brown, about 2-3 min per side
  4. Add remaining tablespoon of butter to skillet
  5. Add garlic and red pepper flakes
  6. Add chicken broths, heavy cream, sun dried tomatoes, parmesan, thyme, and oregano
  7. Bring to a boil then reduce head and simmer for 20 minutes until chicken is cooked through.
