Looking for a great summer meal for your kids? Look no further because this one is a keeper and most kids love it. I say most because I think everyone has at least one super picky eater in the family and all I have to say to that is "more for me!!" I know that if he would take one bite he too would love it, so I haven't given up hope. I made this for my 4 year olds birthday party and it was a hit with the parents as well as the kids! I absolutely love making food for the Harkey kids because they appreciate good tasting food and when Finn's friend Cooper said "MMMMmmm this is good" my heart melted! Thanks buddy! I'm looking forward to sharing this one with my sisters and their kids. The original recipe came from "The Secrets of Paleo Diet for Kids" by Ravi Kishore. Keep in mind this has cheese in it so it is not 100% paleo but it is 100% grain free. Hope you all enjoy this one as much as we do.
Ingredients:- 1 teaspoon of salt
- 1 teaspoon dried oregano
- 1 teaspoon garlic salt
- 1 teaspoon ground black pepper
- 1 teaspoon red peper flakes (optional)
- 2 lbs grassfed ground beef (this can also be 1 lb of beef and 1 lb of organic ground chicken)
- 2 eggs
- 1/2 cup Parmesan cheese
- 12 ounces shredded mozzarella cheese
- 1 cup organic tomato sauce
- 3.5 oz package sliced pepperoni (good option is Hormel's Natural Choice NO Preservatives)
Instructions:
- Preheat oven to 450 degrees Fahrenheit
- Mix together salt, dried oregano, garlic salt, pepper and red pepper flakes. Set aside.
- Mix ground beef and eggs in large mixing bowl
- Add seasoning mixture and parmesan cheese, mix until combined
- Press the mixture into 12x17 inch pan and spread it evenly to create a thin (approx 1/4 inch) crust. (for best results use a fork to spread the mixture)
- Bake in oven for 10-12 minutes until meat is no longer pink
- Drain any grease
- Set oven rack about 6 inches from broiler and turn on broiler
- Sprinkle 1/3 of mozzarella cheese over meat crust
- Spread tomato sauce over the cheese
- Spread 1/3 of cheese over tomato sauce
- Top with pepperoni
- Then spread remaining cheese over the pepperoni
- Broil for 3-5 minutes until cheese is bubbly, melted
- Cut into squares and serve hot with a fresh green salad and enjoy!
- Refrigerate leftovers and you have a perfect cold grab snack for the next day. Taste great both hot and cold pizza style.
