Lamb Burgers with Pesto

Are you craving Lamb tonight?  As we approach Fall our cravings begin to change and this is definitely one of those fall meals that will satisfy everyone at your dinner table.  Well that is of course if you don't have kids under the age of 10...getting them to even smell a lamb burger is an accomplishment.  Hopefully your kids aren't as picky as mine!! 

The herbs and spices in this dish bring out something amazing in the meat so don't leave those out and never leave off the special nut pesto sauce on top as that brings the dish to the next level!  Everyone who has been a guest at our house loves the dish.  Get after it and enjoy!
Burger Ingredients:

  • 1  to 1 1/2 lbs ground lamb
  • 1 teaspoon cumin
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon allspice
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup finely chopped mint leaves (if you don't have mint try cilantro or even fresh basil)
Pesto Ingredients:
  • 1 garlic clove
  • 1 cup unsalted shelled pistachios (other nut options works great as well so you can use what you have on hand...walnuts, cashews or a combination of any)
  • 1/2 cup olive oil
  • 1 teaspoon lemon juice
  • 1/4 cup loosely packed mint (again if you don't have mint use cilantro or basil)
  • a pinch of sea salt
  1. Mix together the ground lamb with remaining burger ingredients in a large bowl
  2. Form four patties 
  3. Pan-fry or grill them approx 4-6 minutes per side
  4. While burgers are cooking, blend together all pesto ingredients in a food processor
  5. Serve burgers over a bed a salad (can be anything type of lettuce, arugula, spinach)
  6. Drizzle pesto on top
